According to a recent study, 70% of women want a home cooked meal for Valentine’s Day. Not only is that statistic staggering, but it’s also great if you are looking for a new way to celebrate Cupid’s day. Cooking can be hard though, especially for us, that’s why we got Chef Brenda from Urban Fare to give us a leg up on a romantic meal idea for today’s day of romance.
Capellini (Coupleini) alfredo
1 package of capellini pasta
2 tbsp oil
1 cup sliced mushrooms
2 cups heavy whipping cream
Zest of half a lemon
Juice of half a lemon
1.5 cups shredded parmesan cheese (reserve ¼ cup for finishing)
Salt and white pepper to taste
1. Add a hood heaping or kosher or sea salt to a pot of water and cook pasta according to direction
2. In the meantime start your sauce, in a fair sized pan add oil, mushrooms, lemon Zest and juice,
a dash of salt and white pepper. stir and cook the mushrooms till they are reduced in size
3. Add the cream and bring to a summer, slowly add in the parmesan cheese
4. Taste the sauce and add more seasoning if needed
Add the pasta to the sauce and serve immediately
Top the pasta with the remaining parmesan cheese and your favorite protein and or vegetables
Then, for dessert, melt some chocolate, crush up some candy and dip some straweberries.
